Chicken and Dumpling for a Chilly Night

Today, after much debate... no, not really... I went ahead and made some chicken and dumplings. The recipe is fairly easy, and is as always safe for those with allergies. I used basic ingredients and basically prepared everything from scratch. The recipe is adapted from my Boyfriend's Mother, whom relayed to me that she took from elsewhere.
 

Chicken and dumplings



Stew:
  • 2 Chicken Breasts on bone... typically the split with bones in them
  • Celery 
  • Carrots 
  • Potatoes 
  • Parsley 
  • Bak Choy
  • Salt 
  • Pepper 
  • Onion Powder (Fresh Onions would be fine)
Dumplings:
  • 2 Cups Flour
  • 2.5 Tbsp Baking Powder.
  • 3/4 tsp Salt
  • 4 Tbsp Unsalted Butter, softened
  • 1 cup milk

Instructions:

Chicken Stew,
  1. Season the chicken with some onion powder, salt and pepper. 
  2. Lightly coat them with flour brown with olive oil. 
  3. Add carrots, celery, potatoes and bak choy. The veggies can be to your liking; I particularly like these. 
  4. Add water to about half way up the contents.
  5. let simmer for about an hour. 
Dumplings,
  1. In a bowl mix in the dry ingredients. 
  2. Mix in the butter. 
  3. Add 1 cup of milk and mix well. 
  4. When chicken is almost cooked, plop pieces of dough on top of stew. 
  5. Cover for 15 minutes.


.... an hour and fifteen minutes after all of this wonderful aroma in the apartment...




I like it! I like it a lot!
